Pound that is. :o) Official number today is 193.
Today also started the 7 day break. I will be honest, I am on day one and I already miss my carbs. I think it is the whole mentality of I want what I can't have. I will tell you, it is a butt load of food.
2 eggs for breakfast & 1/2 a grapefruit. 2 cups of salad, 7 oz of protein, & 1/2 a grapefruit for lunch, same for dinner PLUS 1/2 c. of cooked veggies. That is a lot of food to try to consume in one day and I have to do that for 5 days. UGH!
Oh well, it all is for the greater good. Just so you know I sampled a new bar this week, Cinn. Oatmeal Raisin. OMG it is AMAZING!!! I couldn't taste the raisin which is a good thing because I am not the biggest fan of those. I'm telling you I am in love with this bar!

another week down
Well I end this week weighing in at 194 even. That is really only 1 lb down from last weeks final weigh in. It provided the counselors support in their choice to have me do a 7 day break next week.
The 7 day break consists of me eating a semi-specific menu for 5 days, but during that time I don't get any dairy or starches. UGH!!! I am going to HATE not getting to have my bread or crackers or something like that. But I am assured "it is worth it". After the 5 days I will have 2 days of my unlimited meat and raw green veggies. After that I get to jump back on the normal routine. I am told not to expect to lose next week so I want to pass that along to you. Next week really is to trick my metabolism.
In addition to this quick change, I also purchased a new metabolizer vitamin. Apparently this one is supposed to be really awesome and more effective than the normal one. It is more expensive however instead of taking 6 a day I am supposed to start with 2, they will increase the amount based on how well it works so I could stay at 2 or I could go all the way up to 6. If I only need 2-4 a day that will actually make it less expensive in the long run from the "normal" one. I will keep you posted.
My final piece of news is a quick learning I had this past week. I was waiting for some chicken to thaw and it just wasn't getting there. I decided to go ahead and have a VHP meal replacement instead. I also realized that as the night was coming to an end, I still needed to get another one of my supplements in. Creativity sparked and I decided to mix my vanilla VHP and my Strawberry Kiwi supplement. This actually didn't taste too bad, it was like a strawberry shake. Unfortunately, the supplement is a protein supplement and VHP (very high protein) may have been too much protein for my tummy. I went to bed that night with a tummy ache. I might venture to try this mixture again, but I am a little bit leery since no one ever really wants to sign up for a stomach ache. Yet another thing for me to keep you posted on.

recipe #2 for the weekend
Today I again tried my hand at testing out a new meal. I had some asparagus that I really needed to use before it went bad so I did a quick search for chicken & asparagus recipes. I came up with one that, as usual, I took some liberties with in the making. I did enjoy it but I think had I made it the way they said to it would be much better!
My version:
Boil 1/2 c. water in the skillet then add 1 c. of fresh asparagus and bring back to a boil. Reduce heat to a simmer, cover and cook for about 3 min. Then remove the asparagus and drain the water.
Spray pan with non-stick spray and drop chicken (chopped into bite size pieces) and cook until no longer pink (stirring frequently). While chicken is cooking mix together 1 Tbs of lemon juice, 1 1/2 tsp dill weed, 2 tsp olive oil, and 1/8 tsp mortons lite salt. Once the chicken is ready add in the asparagus and the dill mixture, heat and eat. *I reduced the amount of oil since that really isn't plan friendly.
I enjoyed it! Their version involves making rice in chicken broth and actually mixing the dill mixture with the rice and serving the chicken/asparagus over it. Again, I didn't have the option of rice so I just removed that from the equation. I am also curious to see if there is a way I could have worked my "fat" into the recipe via the lite mayo. Mayo and dill always seem to go well together.
Give it a shot, hope you enjoy it. I am shocked I did since I really don't think I am a big fan of cooking with lemon. Happy eating!

awesomeness in a bowl
Tonight I really had a craving for fajitas (thank you McCormick commercial). I checked out my fajita seasoning and figured I could create something similar with my Mrs. Dash stash. Not to toot my own horn... but a... BEEP BEEP! :o)
I cut up my 6oz chicken into cubes then added Mrs. D's Fiesta Lime seasoning & Southwest Chipotle seasoning. I also put in some minced garlic and onion powder then topped with lime juice. I mixed all of that in a bowl and let it sit for a bit. While that was sitting I cut up 1/4 green pepper and 1/4 red pepper (equals 1 veggie serving on plan) into pieces.
I coated my pan with Pam and then started my chicken bites, once those were cooked a bit I added my peppers, then a bit of water. I prefer my peppers a little softer so if you like them crunchy you can delay the time you put them in to cook. This took about 15 min. total before it was ready. Top with some Morton's Lite Salt and you have yourself plan friendly "fajitas". If you haven't had your starch for the day you could use this with the tortilla serving you are allotted, but I had already had my starches so I just ate it as is.

where did I go?
No where, I'm just really bad at updating. I would say that I am follow my sister's lead, but since I don't have a toddler I really don't think I can do that.
Before I give you the latest news on actual numbers, I will cover the past week. Let's just say it was another week of "falling off the wagon". Yeah, not so good. It started really on Saturday when I joined some friends for a birthday celebration. I went with the intentions of only have a beverage or two. I ended up having 3 and sadly they are really LARGE sized beverage glasses (like 32 oz). Sunday wasn't terrible in terms of plan but then Monday I started to develop a bit of a cold.
I opted to my cold it with some egg drop soup and Chinese food for dinner. For those who are new to the blog, or may not realize, Chinese food is no where NEAR plan appropriate. Then on Tuesday I found desserts again. I had some pieces of coffee cake, chocolate cake, and cheesecake on Wednesday. I think we can all agree that it was a series of bad choices. The whole time I also did not go weigh in... EEK.
Well when I went to weigh in on Wednesday I found that I was up 1.2 lbs. Seriously, not bad considering all the bad choices. I jumped back on the wagon and when I went back to the center on Thursday I was back to where I was the week before. *I think we can say this is proof that the plan is awesome.
Today when I stepped on the scale (at the center) I weighed in at 195!!! so down 1.2 lbs from last week in the end. :o) Driving home I had to contemplate over the fact that it is taking me longer than I thought to get through this but then I remember if I keep making stupid choices... of course it will! Luckily I have people like my mom and my fellow KC Slimdown Challenge teammates to keep me motivated (or put me back on track when they see me eating too many desserts). There are only about 25 more days in the challenge and I feel a pretty strong sense of responsibility to get to where I said I would be at the end of the 10 weeks.

a new start
Today as I stepped on the scale I reached my first goal. As I stepped on the scale, I weighed in at 197.8. I am now at the point I was my lowest 2 years ago!!! Down a grand total of 20.2 lbs!!!
I am so happy to be at this point again and I am very excited about reaching the big mile-marker I have set for myself. Even though it took a little longer to get here than I had originally planned, it is still a great feeling to get here.
Next week they are talking about "jump starting" my metabolism. I am not sure what all this entails, more details to come when I visit tomorrow I think. The counselor I met with today does have some reservations after the whole recent dental work. It is a lot of protein apparently and she doesn't know if I would be ok with all that chewing. I am sure it will be fine so perhaps next week will be a different regiment. I do know that they up the protein and the remove my starches (that might suck a lot), but if it is only for 5 days I think I can suck it up.
