In honor of the fall like weather we were experiencing today I decided to try out the centers chili recipe. Theirs calls for 4 oz of beef but I decided to go for ground chicken breast instead.
I cooked up 7 oz of ground chicken breast seasoned with a bit of chili powder and chipolte seasoning from Ms. Dash. While that was cooking I threw a diced tomato into my food processor with some minced onions and a bit more chili powder. Once the chicken was cooked I added the tomato mixture to the skillet along with a 1/2 c. chopped mushrooms. I let that simmer for about 10-15 min.
The end result was okay. I will probably make it again but it seems to be missing something so I will have to do some more experimenting. Clearly I needed more chili powder and I think instead of minced onion I might actually use a real onion chopped up. I also think it would be nice to pair this with my bread and butter servings for the day.
So the run down on this meal is a protein serving, a full veggie serving, and half of a veggie serving. Pretty filling dinner.
